In the 15th century, an Italian man fell in love with the daughter of one of the most famous teachers in Italy. This Young cooking fan created an easy and quick dish but capable to impress on their wedding day.
This easy to prepare dish was a bowl of rice, given colour by adding saffron, which in those days was used only as a dye to make Paint in yellow and ochre tones, making them look full of life and spectacular. So, when used in rice it looked like gold flaked found in rivers.
Their creation consisted of very slowly adding stock, so it is not absorbed completely, making it creamy and it is called risotto because “riso” means rice.
It is a simple dish but requires the right conditions like the rice grain must be long and thick to release more starch and obtain the perfect consistency. The heat must be medium, not too high, not too low.
